Ingredients

  • 25-121 large bunch of kale, tough stems removed, leaves cut/torn into pieces (about 16 cups) 
  • 1 tablespoon extra-virgin olive oil 
  • ¼ teaspoon salt

Directions

  • Preheat the oven to 400 degrees F and position racks in the upper third and center of the oven.
  • If the kale is moist, thoroughly pat it dry with a clean dishtowel before transferring it to a large bowl. Salt and oil should be drizzled over the kale. To uniformly distribute the oil and salt on the kale leaves, knead them with your hands. 
  • Make sure to evenly distribute the kale leaves on 2 large rimmed baking sheets. Make the chips in batches if all of the kale does not fit.
  • Bake for 8 to 12 minutes, rotating the pans from front to back and top to bottom halfway through until most of the leaves are crisp. (If only using one baking sheet, check after 8 minutes to avoid scorching.)
